Tastes from Outer Space with Wade Fox

Koji wizard Wade Fox teases your taste buds with 6 amuse-bouches featuring the amazing powers of koji. This could be the highlight of your Valentine’s Day weekend. The tasting will be proceeded by a short presentation on the Koji fungus (Aspergillus oryzae).

Wade has 20 years of foraging experience and 10 years working with koji. Wade’s current projects are dry aged truffles for a collaboration with Ousia Labs a solvent and alcohol free extraction processes focusing on cordyceps and other functional/medicinal mushrooms. He is excited to be part of the NAMA culinary arts committee and to meet as many people as possible from the mycocommunity. Wade can be found on Instagram @foxamongbears.
